The fish is cleaned of scales and intestines, washed in plenty of cold water, then swabbed with a towel, salted and left to cool for approx. Ten minutes.

Baked potatoes with mushrooms and eggs

Browsing me like that the files with pictures and recipes from the computer, I realized that I forgot to present you this recipe, although I prepared it more than a year ago. It's not spectacular, but it can get you out of trouble when you want to prepare a breakfast or dinner without too much hassle and without having to go to the supermarket for shopping (that is, you can put whatever vegetables you have around the house ). It is tasty and filling and, in addition, has the advantage of a lower fat content, given that potatoes and eggs are not fried in an oil bath.

If you like, you can throw in the tray, instead of the mushrooms or next to them, some slices of bell pepper and / or slices of garlic. Also, if you prepare this dish in summer, when juicy and tasty tomatoes are plentiful, it goes well to accompany it with halves of tomatoes baked on the grill or, more simply, put in the same tray, next to potatoes. The recipe is adapted from BBC Good Food magazine.

Ingredients (for 4 servings):
& # 8211 potatoes 800 g
& # 8211 onion 2 pcs. medium (140 g)
& # 8211 mushrooms 250 g
& # 8211 eggs 4 pcs.
& # 8211 olive oil 2 tbsp
& # 8211 dried oregano 2 teaspoons grated
& # 8211 salt, ground pepper

Preheat the oven to 200 degrees Celsius. Cut the potatoes into cubes of equal size and boil them, cover with cold water. When they start to boil, leave them for about 10 minutes, just to penetrate a little. Drain them and put them in a non-stick pan, together with the sliced ​​onion. Sprinkle with dried oregano, a pinch of salt and ground pepper, pour in the olive oil and mix gently. Put the tray in the oven and leave for 15 minutes. Add the mushrooms, cleaned and / or washed and thoroughly wiped with water.

Leave in the oven for another 10 minutes, then make, with a spoon, four & # 8220 holes & # 8221 among the vegetables. Break eggs in them and put them back in the oven for 4-5 minutes (depending on how well made you like eggs). Remove from the oven and serve immediately.


Leek dish with olives and tomato sauce & # 8211 tasty fasting recipe

Because it's the weekend and I have more time to cook, I decided to prepare today a delicious dish of leeks with olives and tomato-flavored sauce, which I added to some spicy meatballs made in the oven. Of course, you can serve this dish without legs, if you are fasting.

Leek is a very dear vegetable to me, even if I'm not from Oltenia and I don't go for onions, because it has a sweet taste and a crunchy texture in this combination with tomato and olive sauce.

See below the simple but very tasty recipe for leek dish with olives and tomato sauce. This dish can be served as a side dish, as I did - with two legs or any other type of meat you like in the oven - or simply as such, hot or cold, if you fast. Whatever option you choose, the taste is great!


Scn Cuisine

To start, season the meat well and put it in a bowl that will enter the oven.

In the 4 tablespoons of oil, heat the finely chopped onion and the leek cut into pieces. When they start to soften, we stop the fire.

Move the onion and leek (with oil) in a bowl over the meat, add the tomatoes and garlic cloves. Pour the chicken soup previously mixed with broth, season with salt, pepper and cover with foil.

Put the bowl at 200 ° C for 40 minutes, then remove the foil and leave it for about 15-20 minutes without the foil to brown.

We served it with a healthy portion of spaghetti with zucchini and tomatoes.


Baked trout with mushroom sauce and leeks

The trout are cleaned and washed with cold water. Sprinkle with salt and simmer for 30 minutes.

Mushrooms are washed, cleaned and cut into 4.

The leek is cleaned and cut into rounds.

Heat the olive oil in a bowl, then add the leeks. Stir until the leeks soften.

Bake together for 10 minutes.

Peeled tomatoes are given through the robot.

Add the sedojos and wine and cook until the mushrooms are ready.

Towards the end, add the chopped parsley, salt and pepper and cook together for another 5 minutes.

In parallel, the trout is grilled over a high heat.

Place the fried trout in a tray and add the mushroom sauce prepared above.

Put the foil-covered tray in the preheated oven at 200 degrees for 10-20 minutes.

Serve hot with polenta.

They are very good! And I always do but I never get enough. I also buy some tomatoes that I fill with chopped mushrooms, salt, pepper and greens. In my opinion it is the best appetizer during Lent.

The baked mushrooms are delicious, I make the stuffing from the tails a carrot and an onion given through the small grater, greens, spices and grated cheese on top.
One thing is not clear is whether or not the top pellet mushrooms are cleaned. I always clean them, I don't know if it's good or not, I mean if that peel isn't gelatinous?

I also have a simple recipe: each tail is cut long (julliene) and is put in its hat. Then add salt, pepper to taste (a little spicy are tastier, in my opinion) and a teaspoon of butter or margarine in each hat. Grate cheese on top and put in the oven. After removing, add chopped parsley.
I tried to cook the tails with onions, but they seemed much better without (onions are a bit heavy).

Hi Ioana, I came across your site a few days ago and I find it very practical and inspiring. I really like to cook especially when it comes to my family or friends (I usually do not eat from the food I make, not other but I find it fascinating and also fully satisfying the process of food preparation, combining flavors, culinary architecture, etc.). All in all, I wanted to tell you to try jamie oliver's mushroom recipe (I'm a fan). It's very interesting to see how the taste buds react to different flavors of the same food and how each mushroom will become a new taste and surprise experience.

I don't clean the mushrooms from the skin. it doesn't make sense, because they don't have a different consistency from the rest of the mushroom. just wash them quickly under running water or wipe them with a damp napkin. it depends on the time and the fun of that moment.
I don't put oil because the tray is Teflon and they don't stick. but it would be good to put a baking sheet underneath, just so you don't have to rub the tray when you wash it.

@Tamas Nicolae I haven't tried how you propose with fish and I don't think it's a big deal. Why put fish next to sausages and cheese?

I also make baked mushrooms, but mine don't have tails, because they just don't hang in the trees. Mine have little legs, that's what the "tails" of mushrooms are called, even kindergarten children know that!

very few calories, mushrooms have 30 calories per 100 grams. the rest of the ingredients are negligible. and if you put 1 tablespoon of oil you add another 150 calories.
what fast is this with 600 calories? it's very little if you intend to keep it until Easter, you will be malnourished.


What and how do we cook

I seasoned the two resulting fillets with sea salt with aromatic herbs (rosemary, basil, thyme, black pepper) then I poured a few drops of olive oil, greasing the meat on both sides.

I cut a red onion into julienne and placed the fish on top. I spread a few threads on the top of the fillets. I added kalamata olives (as many as fit in a cup of tea), dried tomatoes preserved in oil and two tablespoons of medium capers.

Initially I wanted to add white wine but, not having it, I remembered that I still have in a bottle - opened for the holidays - a remnant of semi-dry white champagne. I had read somewhere that champagne balances the taste of spicy dishes with its acidity, so I decided on the spot: I will use champagne instead of dry wine. As a result, I added a glass over the prepared fish, ready to be placed in the oven.

I left the pot in the oven for 15 minutes from the moment the liquid started to boil. A fish cooked more than it should lose its consistency. In the 15 minutes all the vegetables left their aroma in the sauce and the fish was exactly as it should be: tender, spicy, borrowing the slightly bitter taste of olives, the sweetness of dried tomatoes, taking as much salt as needed from the added capers, without the flavor of the sea fish is altered.


Cheese with leeks, mushrooms and tomatoes in the oven - Recipes

Leek with baked olives

15 minutes + 20 minutes in the oven

150 grams of natural olives

4 tablespoons tomato juice (or peeled and chopped tomatoes)

a tablespoon of wheat flour (optional)

Leeks, cleaned and washed, cut into slices as thick as you want (to save time, cut several leeks at once).

In a pot deep enough, add a little water (about 100 ml) and leeks. Cover and simmer until leeks are soft (5-10 minutes).

Meanwhile, wash the olives, remove the seeds and cut into rounds or halves.

After about 10 minutes, remove the leeks from the heat, drain the water if necessary and add the olives. Put the composition in a no stick tray or in a yena bowl, add the tomato juice over it, and put it in the oven at 180 degrees.

If you use fresh tomatoes, get a delicious tomato sauce as follows: put the tomatoes in the oven for 10 minutes, then put them in a sieve with a wooden spoon, strain the juice and pulp of the tomatoes.

Optionally, you can add a tablespoon of grated flour to the tomato sauce. You will get a thicker consistency.
