Linzer Torte (or Linzertorte) is an Austrian dessert that is usually prepared during the holiday season. The linzertorte is composed of a base of almond shortcrust pastry flavored with cinnamon, vanilla and lemon peel then stuffed with red currant jam. Linzer torte takes its name from the city of Linz and is considered the oldest cake in the world, its first recipe dates back to 1653 and can be found in the cookbook Buech von allerley Eingemachten Sachen. How to make the Linzertorte
In a bowl, place the flour, sugar, ground almonds, cinnamon, grated lemon peel, baking powder and vanilla
Mix and put the butter cut into chunks and the eggs in the center
Work with your fingertips until all the flour is absorbed gradually, knead until the dough forms a ball and place in the fridge to cool for an hour.
Take back the dough and with 2/3 of it roll out a sheet of 3 mm thickness. Roll out the dough on a greased and floured tart tin.
Prick the dough and cover it with the jam.
Form the rest of the dough into even strips to be placed in a grid on the surface of the cake.
With the prongs of the fork, seal the edges of the strips to the jam tart well. Bake the linzertorte at 180 'and cook for about 30 minutes.
Remove from the oven, let cool, and serve the linz cake
