The zucchini flan it is prepared as a side dish or as a single dish. It can be brought to the table the day it is prepared or the day after, as it is good both warm and cold. To do this, the zucchini will first be cooked in a pan, then they will have to be added to the ricotta, eggs and parmesan mixture, and finally everything will be placed in a plumcake mold for baking.
In my house it really liked it and in fact it is one of the recipes that is also present in my second book. But no more chatter, here is my recipe for the zucchini flan :)
How to make zucchini flan
Clean the courgettes, cut them into 3 mm thick slices and the onion.
Put both in a saucepan with the oil and add 1/2 glass of water and salt, stir and cook for about 10 minutes.
Meanwhile, in a bowl, mix the ricotta with eggs, parmesan, salt, pepper and nutmeg.
When the courgettes are cooked, blend them with the blender and add them to the ricotta mixture.
Mix everything by mixing.
Now pour the mixture into a buttered loaf pan and level the surface.
Bake in a preheated oven at 180 ° C for about 40 minutes.
Let it cool in the off oven and then transfer it to a serving dish.
Your courgette flan is ready to serve.
